AFAIK, some steels are from the States and others are from Japan. An example would be all S30V knives are made in Golden and all VG-10 knives are made in Seki. I would venture to say quality is quite similar for both.

I too cut food every now and then and it would be much healthier to use a mineral oil. What kind do y'all use? Is it just any ol' bottle labeled "Mineral Oil" or should I look for anything in particular?

Does it matter what kind of texture the leather is? Such as, if you had a really smooth piece of leather from a belt as opposed to a more suede-like material that was slightly rougher. Would the smoother leather give you better results?
