I use my Yin or Yang every day. They're the best kitchen knives I've ever used. If you want to start out with just one, I'd recommend the Yang. It's easier to make straight up and down slices through thick substrates with the Yang. Later,

For discreet SD carry, I recommend the CF Harpy. I think the pink Delica is too garish. The elegant high-gloss finish of the CF scales would blend better with the textured leather of a Louis Vuitton or Gucci purse. Also, the Harpy is an amazing cutter. Later,

Using the 701 profile stones reduces rounding of the teeth on the serrations. Using the SM method you round the teeth which reduces the aggressiveness of the serrations.
