Les Stroud (Survivorman) says when getting a lighter for emergency use get the most garish orange color you can so you can find it easily if dropped.
I think it was just a matter of time before outdoorsman, fisherman etc. started requesting bright handled knives, and once they get used to the functionality they will be a market for it.
Your dive watch example is interesting. From what I have seen, a metric butt-ton of people have nice dive watches that never get wet, because they look cool. Professional divers use them too. It is kind of like the really "hardcore tactical knives"--99% of the people who have and carry them are going to "tactically" open their mail with them, not use them in a SWAT or military Spec Ops environment. There is nothing wrong with this. If someone wants to buy a watch or a knife that has a real advantage in some situations, even if they don't get into those situations, that is fine. It is still more of a "this is interesting or cool" or "fad" purchase than a need driven purchase. Orange and yellow handled knives will always have a niche for the outdoors market, and rightfully so. I doubt that the color will endure as a high volume seller in knives designed for carrying in urban and office environments. I would bet that a few people have been sold on an orange dial on a watch because that cool diver had one. I know knives have been sold based on stuff like that--some companies specialize in that kind of thing, and I've even been told that a few Albo Kali Silat videos have sold a Spyderco or two
Of course, I could be wrong. I have only to look at the massive amount my portfolio has decreased in the last several months to realize that I am not very good at predicting the future :D .
