I keep 3v in the kitchen. No issues, sometimes (very rarely) i see like a small spot, but it can be wiped off with a kitchen towel. i don't try to protect them, i just use them.

Honestly I think choosing steel just on one property like toughness without considering the geometry is a mistake. Any steel can deal with bones if the right geometry is used.
Usually (usually) people making knives choose the steel wisely. I didn’t know people were using 3V in kitchen knives ...

As a side note, my experience with steels is; 1095, 420HC, AUS-8/10, VG10, and S30V.

I'd say a classic bowie design, something like the 119, but using a higher end steel, G10 handles and a true full tang.

The only available bowie I've seen that is somewhat similar is the Natchez from CS. For the price though, I'd rather the Respect or Province. I'm not sold on the cable tang used in the Natchez, it's 3V though and looks rather stout.

My primary would be a fixed blade, simply due to the fact that it's easier to clean.
Personally we bring three knives each hunt. That way we can rotate if one becomes dull and another guy can sharpen.
We go for deer, moose, black bear, wolf, and coyote.

For me, I look at quality first. If the country of origin is the US, Canada, or Europe, that's a plus. I'm not into politics. I judge people by their workmanship.

As mentioned, we don't shy away from knives used as weapons, but discussion is mostly for defense, not offence. Obviously, we have many models that were designed with defense in mind.
