If I had to pick one for the top of the pile it would be the Spidiechef.

A gem that is less appreciated than it should be .. Spyderco Brouwer.
Mine is the pre-CQI version and I don't mind the clip as much as I thought I would from the reviews. S30V stays plenty sharp and it's a very nice blade shape and knife action came well dialed in.

Thanks. I saw that but read that that version did not have a hollow grind so did not pursue much of the discussions since that was an appeal factor for me.
