What is this part of blade called? Which Spydercos have it?
Is there a name for this part of the blade that curves down to the bolster? Or maybe this blade shape has a name (other than recurve, which describes a wide range of curved blade shapes)?
Which Spyderco models feature a blade with this curved portion at the blade's heel? I'm finding this shape really useful for cutting sheet plastic. It traps the plastic a bit like a hawkbill, but still gives a very utilitarian straight portion in the mid-blade, with a traditional tip.

That's a typical fillet/boning knife shape. The only reason it's shaped like that is to provide a heel to stop your hand from sliding onto the blade while also having low height so that it's flexible and easy to maneuver against skin/bone.

I call that "half the blade height has been sharpened off" 
Not sure if that's really the case here but that's where I see this the most. There are designs that do this intentionally though and I do like it, Big Chris make a lot of his fixed blades like this, where there isn't a sharpening notch etc at the heel of the blade and the plunge line and edge taper into the guard.
I'm not sure if there is a proper name for this. It's not something I'd want on everything, I wouldn't want it on a 10" chef's knife but I do really like it on most other EDC type blades. The way I modify the nubs on my Mules gives me a similar end result.

Firstly, that's a very slick looking mod. Looks factory. Curious what tools you used to achieve that. Secondly, I wonder if it the front edge of your kick would be sharpenable (with a great deal of effort)?
I really like how this "boning knife" or "over-sharpened" blade shape deals with plastic wrap.
Could have sworn some Spydercos had this sort of blade heel ?

The arrow is pointing to what I would just call the "heel" of a recurve blade. Not sure if the curvature lends itself to more descriptive nomenclature
Overall blade shape of the OP knife reminds me of the Southard Hanan. I need to carry that little guy more.. every time I do, I find the recurve profile is way more useful than I would have guessed initially.. impressive sharpened edge length for its relatively small profile too.

Ah, I missed the part about this little bit being sharpened. I suppose you could sharpen it on a Mule, you'd just have to grind it down to match the rest of the blade grind. I did a half-assed version of this on my convex Bodacious.
I do my mules mostly with a Dremel, and I have a little mini bench grinder that I use to grind off the majority of the nub and then use a Dremel for the fine tuning. I mostly use sandpaper barrel bits.
I think what you want might qualify as some variation of a recurve. You could have just about any Spyderco blade reground this way, you'd lose some blade height though so this won't work on a lot of folders because the blade tip probably wouldn't close all the way into the handle anymore, you could maybe get away with it on a Military since they close so deep into the handle. Fixed blades would be much easier.

Reminds me of the Hanan. Although I would consider it more a result from the recurved blade opposed to an intentional feature.

Ross Seyfried (the gun writer) had a similar-but-different idea for his "ideal skinner" knife. Found it in an old Guns and Ammo magazine where he was extolling the virtues of small knives over large knives. The idea of his skinner was to hold the knife blade up, and to split the skin from underneath.
