Having kept my Delica virgin for the last while I decided to do minor cutting on a springwater bottle the other day
After two cuts I noticed that the VG-10 blade was notched up in three places minorly. I have yet to purchase a Sharpmaker but my guess is that I should touch that up as opposed to leaving it correct? Or would a steel rod help?
Since the edge bevel is so thin that it get damaged so easily should I try to make it thicker? What is the factory angle, 15 degrees on each side or 20 on each?
Thanks

Steel it lightly and don't worry about it. A few licks on a strop could also work those dings out easily, as it's simply where the edge folded over a little.
The factory edge is between 30 and 38 degrees, and varies both by model and by the person who did the grinding. If you plan to use it hard, run it to 40. If not, 30 is sufficient.
