i normally use militec for pivot and mechanisms.. but on the blade it makes it unsuitable for food prep.. what do you use to protect the blades WITHOUT poisoning yourselves ?

My non-users, I wipe the blade with a very thin film of Breakfree CLP. The stuff I use, nothing. Just wiping them down with a clean cloth once in a while is all. I found if I used a protectant or lube, especially on a FRN knife, and it worked into the pivot area, I eventually got a gummy mess in the area.

Mineral oil is NOT derived from vegetables! Then it would be called vegetable oil. It's petroleum-based, related to Vaseline (petrolatum).
Anyway, I lube pivots with food-grade silicone, labelled safe for food prep.
I always open and close the knife several times after lubing the pivot, then wash any residue from the blade.
Blades I just keep clean and dry -- I don't directly lube them.
I use the silicone on all folders, so I have the option of cutting food with them should the need or desire arise. (Who wants to eat WD-40?)

I use Ballistol for blade protection. As the matter of fact, I just polished the handle of my Scorpius a bit and saturated it(and the blade) with Ballistol to let it sit overnight so the oil can get in the pores of the steel.
The stuff makes me cough like ****, but it works great. It's usable for food prep too(at least that's what the presciption says)

You're correct in the fact that Mineral Oil is NOT derived from plants; nonetheless it is considered food grade and non-toxic. The reason that vegetable oils (Olive, etc) are not recommmded is that with exposure to oxygen, they oxidize and become rancid. Mineral oil is relatively inert and non-digestible, hence it being used as a lubricant laxative. Perfectly safe to use on food prep knives, just use it sparingly so as to not goop everything up. Personally, I never oil a blade.
