What I have discovered, and continue to confirm, is that the tasman is an absolutely spectacular knife for cleaning larger fish. Aside from being an excellent blade for gutting and gill removal, the tasman is very useful when filleting large scaled fish like snapper. Big Snapper have very large scales (50¢ piece size) so you can't really remove the filets until you remove the scales around the cut line. A filet knife just won't push through those big scales. What I do now though is just score the filet all the way around with the tasman. That serrated hawkbill just rips right through everything, skin/scales/meat, quick as you please. If you were ever wondering what a serrated HB is good for that you can't do with a regular knife, be sure to add this to your list! :) A simply outstanding tool!
