I use whatever my EDC is for the day, usually either my full size Manix or Large Regular Sebbie. I am thinking about looking into a kitchen blade by Murray Carter though, as soon as funds allow. :D

I have also used my Bill Moran for some meat prep. Really good slicer. It was quite remarkable to me at the time. I forgot, I used it because it was the first really sharp knife I owned and wanted to see what it would do. Thats what made me first long for Spyderco kitchen knives :)

You could try one of the Aqua Salt. It has the rust proof balde so you souldn't have to worry about clean up. Plus it's designed for use in the fishing industry. It what they use on deadliest catch.
