I just purchase a 7 inch santoko my local Aldis, the german based deep discount grocery retailer. I do not need any more knives (I actually need less) but it was pretty and cheap.
Twenty dollars on clearence.
-------------------
The knife reads:
DAMASTMESSER
Solingen
Made in Germany
HGS
-------------------
The box includes:
The blade is manufactured from Damast steel, a metal originating from Japan.
Manufactured from high carbon steel (59 Rockwell hardness).
The steel is forge welded together many times to give 65 layers (32 layers on each side + 1 high carbon steel in the middle).
Blade: Length 18 cm
Carbon steel (VG 10)
Rust proof and flexible damast steel
32 layers of steel each side
Handle: 18/10 stainless steel
------------------
Does anyone have a clue as to what I have purchased? Almost all of the web pages I've found are in german and I can't get much from them.
The knife is not what I consider sharp. The grind looks awful but my laminated Spyderco looks almost as uneven.
I'd guess only the center layer is VG 10 with the outer layers being mystery steel. It is pretty.
When I get time I'll test it out and work to give it a propperly anal sharpening.
Cheap Damast steel knife?
