Cut the plastic off some batteries for our carbon monoxide detectors. Remember everyone, always smart to change your batteries in your smoke and carbon monoxide detectors at the same time we have to change our clocks!

Last thing I did was dice some strawberries for dessert. Reground K390 Endura worked like a charm!

Wow, what animal is that? I have zero hunting experience. How does the delica do for that kind of work? In my head I always thought you would need a much larger knife for something like that since even a bell pepper is easier with an endura, but maybe it is a totally different situation. Cool shot! K390?

I've used my Spydercos for field dressing hundreds of times. No complaints.
I generally keep the liver and heart. It looks like you left the liver, and maybe heart too?

Yes, K390 factory edge straight out of the box. Cut like a laser through hide and soft tissue. I’ve used fixed blades and other folders in the past, Delica was a bit of a Goldie Locks - not too big and not too small, just right. Use a pocket sized folding bone saw (wish Spyderco did one) for cutting through the pelvic bone and breast bone.
Drag back to camp whole and skin (small fixed blade, Buck 102 about 45 years old with my own edge, it did very well, unfortunately I can’t recall what grit and angle I did it at).
Goes to the butcher whole, onto a meat hook on a rail and that is the last I see of it until I pick it up; flash frozen and in small packages of steaks, burger, and sausage products.
Mule deer.

Yes, I leave the internals. The birds and coyotes have it gone in 24 hours … so it really doesn’t go to waste. This year a juvenile bald eagle in the mix with magpie and crow. I used to keep the heart and would grind it fine for my tropical fish, those days are long gone.
Freezer has been bare this last year, happy to get this one.

Deer liver is much smoother in texture than calf liver. Deer heart is perhaps my favorite cut. Smooth muscle and slightly elastic but tender texture. No need to over complicate things. Simply pan sear or grill to medium rare.
Delivering a whole carcass to your butcher may be convenient, but is a missed opportunity to play with your sharp toys. Not saying your butcher is untrustworthy, but the yield would probably be greater with less waste if you processed it yourself. Bones from a whole carcass makes a lot of rich & tasty demiglas. Saves money, too.

Congrats on the take and thanks for the info! Great to see the humble delica getting work done! The k390 delica is a sleeper but such a great workhorse. I carry two knives most of the time. One for tape and packages and one for food. One of my favorite combos for this purpose is the chef and dragonfly.
