Folders have no place in the kitchen. They're short and unhygienic. Spydercos in particular are made from chunky blade stock that isn't well suited to cutting food. Gutting a fish when you're camping? Sure. Breaking down cardboard? Yep. Dicing an onion? Not a chance. A nice, thin $20 Opinel will run...

ZDP is much closer to being properly stainless than Hitachi's blue and white paper steels (and super blue). But it's not exactly corrosion proof either. As Sal eloquently put it, it will rust more easily than the chrome content would indicate. Super humid or sweaty environments might not be the best...

A folding knife with a 120 mm blade is getting fairly large to be easily carried in the pocket. Sure. But calling anything a "chef" that's 84mm long is silly. Especially when it's 3mm thick. 84mm is barely cracking paring knife territory. 120mm is long, and I don't expect Spyderco to shoo...

The best use for this knife is as a camping or backpacking knife. And it's a freaking awesome backpacking or camping knife. If you want to carry a pocketknife to cut food, a cheap Opinel or SAK is a way better choice than a Spydiechef. They will outslice it by a mile, owing to simple blade geometry. And you won't look like a weirdo eating with an Opinel. You will look like a barbarian if you eat at a table with a Spydiec...

and my personal favorite is the one from Extrema Ratio, to me overpriced but I really enjoy N690 (especially in humid environments like a bathroom after a shower) and also the fact that is non-locking making it legal almost anywhere...a nice picnic knife if you ask me! :p The ER T-razor has a liner...
