The reality for me is I just have a good sized stock of 'consumables' I keep in rotation.

What are the knife laws in NYC ? I was in DC area in October and after looking all over I found the best I could at KnifeLawsOnline.com. They have DC but not NYC. I bought one of the cheaper two rod ceramic sharpeners and found the 40 degree to be the same as their fixed angle.It's the way they measure the angle that makes thye difference.
