If you're going to cut thick plastic cable ties I would suggest something without too fine of a tip, or use small cable snips for those, I find it really easy to accidentally twist the blade when under one of those. I wouldn't worry about transferring the coating to my food, but I would think that an uncoated blade would be smoother and therefore easier to cut with (at least with raw ingredients, I doubt it matters much on cooked stuff.)
