I find a dual grit edge good for this sort of conundrum - you can do the show side to tickle your super shiny mirror edge proclivities, and the back side which you don’t look at very often is kept very coarse. If it’s any consolation my VG10 does that if I forget to spray it with marine tuf-glide after I clean it.
