I'm sure BBB will be along soon to comment with more info, but based on a lot of the tests I've seen, and my own experiences, Rex 45, K390, and 10V should definitely be among the front runners.

For what it's worth, I absolutely love the Kapara, but I've been holding off on buying one until there is a version in a more wear resistant steel. LC200N, S90V, S110V, M390 would all be an instant buy for me.

Definitely in agreement on S90V. I didn't see what the fuss was all about originally, but after I got a PM2 in it, I've been blown away with the edge character, wear resistance and toughness. It's probably the best all-round EDC steel. I can see why Spyderco uses it on a lot of their high end models...

I'd recommend M4, but also 52100, Cruwear, AEB-L, or Superblue. Stay away from Rex, it's a pain to deburr. Maxamet is a little less tough, so even though it's my favorite steel currently, I would not recommend it as an introductory steel.

I'd also love to hear some more experiences with different grits. I've tried sharpening my Rex45 Military to 600 grit and was not as happy with the results as I expected. It had a nice toothy edge, but lost the "bite" quickly.
