I don't necessarily need salt water corrosion resistance, but when you're working outside all day in the soaking rain, or cutting something like tomatoes, it's nice to not worry about it. But in those circumstances, I think even S110V is fine

Just chiming in to say that I always prefer stainless and more stainless is generally better. Sure, the counter argument about maintenance exists but that isn't always enough and the supposed drawbacks to stainless are rarely compelling to me.
As stated, it isn't just aquatic activities or blood. I've spent lots of summers outdoors in moist forests, 80-100 degrees Fahrenheit and 80-100% humidity. Evaporation can be horribly retarded. My sweat also seems fairly corrosive. I've had plenty of occasions of semi-stainless like D2 spotting in my pocket. Yes, oil, but oil gets rubbed off with some activities and blades getting dirty or gummed up is an easy invitation to rust. I've also spotted AUS-8 and some other lesser stainless. VG-10, S30V, and S35VN seem to be in the safe zone for me in those environments but based on those experiences, a higher hedge is always welcome.
