It's hard to tell even in videos but the reflection on the blade sure looks flat. But, the hollow grind on my Ayoob sprints were all way less hollow than my original so it may just be less pronounced. Mine is also due to arrive tomorrow so we'll see.
If you’re talking about the sprint Ayoob in Cruwear, those aren’t hollow grinds, they’re saber. I had mine reground to hollow and it was a world of difference.
The Cruwear sprint is hollow, however small it may be, I sharpen the back side of mine FLAT on a stone and you can see where scratches are only on the edge and top shoulder of the grind. It may be so small it doesn't matter in performance but you can see it after sharpening the way I am.

"Saber" is in reference to the height of the grind in relation to the blade. A saber grind does not span the full height of the blade. There are also full flat grinds and full hollow grinds. As the name implies, these grinds do span the full height of the blade.

It is confusing because they spec other “saber” grinds as “hollow” like the Bradley folders. I’ve always taken that to mean the saber is flat and the hollow is hollow. What does that mean for the Centofante 3? Who knows, but at least an apples to apples comparison is possible with the VG-10 version.
Can confirm that it is a screw pivot and is a flat saber grind.
First impressions besides that are fit and finish are superb. Perfect centering, lock bar is flush opened and closed, very tight lock up, no chips around the holes as can be an issue with CF scales (and they appear to be solid CF not laminate). The edge is extremely sharp but does have a bit of a flat spot just below the bug. Opening action is smooth, no weird gritty feeling. The thumb hole edge is very crisp which I very much prefer but that may be a negative to those who like a smoother hole edge.
I don't want to over hype this knife but this to me seems like the quality of knife that Seki were making back in the early 2000s. It's definitely on par with my nicer vintage micarta models.
The blade grind is a real bummer. I haven't decided if that's a deal breaker or not. It's still an extremely thin blade. I'm seeing about 0.0225 behind the bevel on my calipers.
It's very cool that they've made the effort to CQI the construction of this old (I wanna say) sleeper. Hope it means we'll see more variants in the not so distant future.

PB, and super thin. Not much gap between blade and liner, I can only see them by shining a light down in there and seeing the coldish reflection.

It does seem to be a dying feature, even the classic stainless Police is no longer hollow ground.
A little off-topic, but I find the reluctance to do a deeper hollow on blades coming out of Seki to be a little worrying. I am really looking forward to the HP Delica, and a deep hollow (or at the very least, a hollow grind that isn't barely hollow) is what appealed to me. I hope I am making a big deal out of nothing. The knife hasn't even been revealed yet.
Compared to my Centofante 4. I have never had the 3 so I was surprised by how much shorter the 4 is in blade length, but that's the price you pay to get a wharnie blade into this handle shape.
It's thinner than the originals, 10.07mm on the 4 vs 7.76mm on the 3.
Although, the Cruwear 3 is heavier at 3.4oz vs 2.4oz, but since the blade length is different this isn't a perfect comparison.
Wow, ultra thin! That really is tempting, very classy looking knife overall. Also even better not being laminate carbon fiber. Not that I have an issue with it, but it classes a knife down a bit in my eyes when there are other carbon fiber options available. Dang, sure is a beauty though. Wishing I didn't read this thread haha!
