I will be going on a 10 day cruise as well and this thread is very helpful. I will be heading up to Alaska and will likely be carrying my Green FRN UKPK in Gin-1 and my FRN Ladybug in VG-10 and maybe a FRN Dragonfly 2 in VG-10 or a Squeak.
So to summarize:
1. safe to carry knife around ship;
2. always have knife in your bag and not on your person when going through the x-ray when getting on/off the ship at ports and knife in luggage when embarking/disembarking and of course in airport
3. Blade under 4 inches as per cruise guidelines;
4. rust resistance is not a big issue unless diving but H1 is overall preferred;
5. people friendly knife preferred;

Which knife for a cruise?
It might help to put a knife in a small bag with a pair of finger nail clippers, nail file,
band aids, medical tape and other medical type supplies. It gives it the apprearance
of a medical/maintenance tool. Just a thought.
I have went in places that don"t allow knives and have clipped a ladybug to a pair
