Started a food truck menu last January. We've been gradually adding items to our menu. Nothing fancy, just basic pub style food like wings, pretzels etc.
Branched out a little and started smoking ribs two months ago, and today we sold our first hand stretched pizza.
Still dialing everything in but the customers were happy with it
Mild sauce base, mozz, cheddar, thinly sliced mango, chicken tossed in a splash of hot sauce and my personal 3 chile blend (approx 8,000 scoville).
Turned out great. Hot enough to make your mouth tingle but not so spicy you'd need a drink after every bite. I'm a big fan of sweet & spicy combos like this.

Yes. I make sauces for wings we sell out of our food truck and use them on pizzas sometimes. I make more traditional sauces like marinara and alfredo too.
I haven't gotten as far along as making my own sauce yet, but I want to learn how eventually.
alfredo is an easy starting point. first time I made it a waitress asked if I could whip some up, so I looked up a basic recipe and realized our kitchen had all the ingredients, even if it wasn't on the menu.

Vivi very good, I love that! It's like an Italian Calzone pastry combined with a so called Pig In Blanket. I could add some good cold cuts to that or variations. An all vegetarian version or a seafood version. Thanks!
