For me I would say my MOD Hornet ;) . Not only does it take an awesome edge ...it holds it for a very long time. Take Good Care and Be Safe Always.

God Bless :)

Here's another Opinel No. 6... this one is in carbon though...

I was disappointed with it's sharpness initially. But a few minutes on the Sharpmaker (flat with the rods on the backside of the base) and it's a scalpel. Easily the sharpest knife I own and it actually holds an edge decently well.

Not the best picture, but this is a pretty close second. S30V Paramilitary.

All of my filleting knives are the sharpest, easist to sharpen and stay sharp.
Razor thin blade profile MAY be a contributing factor.

I would have to say mine is my Kreined Barong. A much, much better knife

since Tom did his magic act. I had 2 others that thought were as sharp as

the Brong but the Brong won the arm shaving contest!!!!!

A Rockstead Shin. Hands down the sharpest knife I have ever owned. It came razor sharp and holds an edge better than any knife I have ever owned.

I love Case XX I have two trappers and a shark's tooth that are very sharp. My sharpest is probally my Endura PE VG-10. I was cutting a dog's leash 1/2 wide by holding it and swinging the knife like a sword and cutting it into pieces. I can also do it with my D'allara.
