No no, I think u misunderstood. I only use the tasman to score the filet before removing it with a filet knife. A regular filet knife won't cut through the skin and scales on those bigger snapper. So normally folks remove the scales from the cut line first but I've found that just pull cutting making a half inch deep cut all the way around with the tasman is quick and easy. Then I cut the filets out. HB and a filet knife...both see lots of use at the cleaning table.PayneTrain wrote:Nice catch! Ah I gotcha. Yeah I just scale em first but again, I've never dealt with a red snapper outside of a restaurant. One of the jobs I hope to have for my serrated Pacific this year is cutting the throats of bluefish to bleed them out, but I've been wondering if a hawkbill like the Tasman would be more appropriate. Hopefully I'll get a chance to form an opinion.
