I’m a wharncliffe guy and just picked up a 2nd hand Spydiechef. Never tried sharpening a blade with this much belly. Any tips for a novice sharpener trying to tune up a Spydiechef on a Sharpmaker?

I'm no expert at knife sharpening, but I've found that the Sharpmaker brown stones put a pretty sharp edge on a knife blade. What exactly do the white stones add to this? The ability to slice a hair? I don't spend a lot of time slicing (or splitting) hairs.

Any suggestions for storing the Sharpmaker when not in use? I see how one set of rods fits in the plastic case, but not the other set.
