A Maxamet Manix XL would be great. Big and thin. Or a Military, but it's too thick to be a cutter and I've already got three of these.
The Military is a great all-rounder, but I think we can all agree an Endura cuts better. I don't have a Manix yet, but I think it's the same.

High Rockwell steels are prone to chipping, and serrations are dangerous for them. Stuff like 3V, 4V or Cru-Wear could probably handle them.

I'm not really sure to respond to that. Outside of how well a steel takes an edge I can't say a steel feels more aggressive during cutting for me. The S110V has had the new changes since it was released (as do all the new sprint runs). When the 2017 catalog dropped it showed the changes on the entire Military lineup. BTW: I've actually got a bunch of M4 (none from Spyderco yet, sadly), and a 4V Mule. The Mule is certainly very nice, sharpening M4 is much harder, though.
