I will stick to clean, uncoated blades for my food prep. That is why I always bring my Victorinox paring knife along. Best $4 you will ever spend for peace of mind. You have to watch out for "food safe" too as there are different levels of this standard.

I.E. KPL Knife Shield packaging and site information state "100% Food Safe & Non-Toxic" and "for use on surfaces that come into direct contact with foods". It is "food safe" to the NSF H1 standard meaning acceptable for incidental food contact and can be used in food processing areas. Not what I want on my food.
