Arroz del senyoret (gentleman’s rice) or fish paella (not seafood).
Very quick recipe…
Dice the vegetables…
(The Kapara is helping me in the kitchen today)

The fry the fish, and then reserve it in a dish (a good quality extra virgin olive oil is important)

Now we fry the veggies in the same oil…

When the veggies are soft we add the reserved fish…

Then we add the rice (round rice) and stir it slowly to mix the flavours…

Now we add some fish soup (the double of soup than the amount of rice)
Image
And now let it cook for about twenty minutes. The first three or four minutes at high fire and the rest of time at low fire…
Now is when I open a beer and let the magic happen…

Then we take the pan out from the fire and cover it with a fine fabric cloth to let it cook with its own heat for about five minutes…

And…voilà! Our rice is ready…

I made Salmon Piccata a few days ago and forgot to post the picture. One of my wife's favorites.
There was also asparagus. But, I forgot to drop them till I had it plated.

Also, something I didn't make. But, decided it deserved a toot. We had matcha cheesecake for desert on our anniversary dinner.

Good, albeit different, when eaten by itself. However, when combined with the most delicious, perfectly chilled blueberries I've ever had and some sort of crisped white chocolate or something(no clue)...
a flavor beyond description.

Truly a highlight, that I will be attempting to recreate in the future.

Mea culpa, I used the term fish as a generalization. I was trying to differ from the seafood paella (the most known).
Actually the traditional paella recipe (Valenciana) is made with chicken, rabbit and vegetables. Although the best about rice is that it can be cooked in a thousand ways.

Looks amazing. I actually have bought some saffron. But I do not have a paella pan. How big is yours? I do have a veritable plethora of cast iron though. Would that work, or will it hold the heat too long?

Mine has 32 cm (12,5 inches) of diameter, ideal for 4 generous rations, albeit is recommended for 6 people. You can get by perfectly with an iron pan as long as it is wide and shallow...
As you said, the iron cast maybe retains the heat too much, so once you have give it the first heat hit and the water starts boiling, I would be careful with the fire to not burn too much the rice at the bottom of the pan (if it's a bit toasted at the bottom it's perfect).

Pork tenderloin steak, in a caramelized onion sauce. A basic recipe, that can draw big reactions.
