Yesterday I cooked baked spaghetti. It’s the only way I’ll eat spaghetti. Since I’m gluten-sensitive, I use Tinkyada brown rice spaghetti pasta. It tastes every bit the same as ‘regular’ wheat pasta. I can’t post pics, but here’s my process:

1) Add noodles to boiling water and cook for 14 minutes (or as the product’s instructions indicate). Put in strainer in sink, and lightly rinse noodles with cold water.

2) Sautée diced onions, ground turkey, and chopped mushrooms.

3) Preheat oven to approximately 375 degrees (yesterday I did 400 degrees).

4) In a casserole dish, layer as follows: A thin coating of olive oil; add some sauce; add one half of the spaghetti noodles; top with one half of the onions, ground turkey and mushrooms; top with sauce; add rest of noodles; top with rest of onions, meat and mushrooms; top with rest of spaghetti sauce.

5) Bake in oven for about 20 to 25 minutes (depending on the temp you use). Check the spaghetti periodically.

6) Take out and top with shredded cheese, and top that with chili powder.

7) Bake for an additional 3 minutes to allow the cheese to melt, then bring out and allow to sit on the stovetop for about 10 minutes before serving.

Wife made a huge pot of homemade chilli tonight. I’m getting two huge pork shoulders ready for the smoker at midnight tonight. Gonna be eating good tomorrow, celebrating my birthday(Friday) and my sons turning 3 tomorrow (Sunday).

Yes, they do. :)

I’ve also used their gluten-free pasta shells and elbow macaroni as well.

Leftover prime rib tortas. Cube and process meat in food processor (cuisinart works). Add an egg, seasoning (salt, pepper, thyme, chinese parsley etc.). In a separate pan saute chopped onions and garlic in butter. Mix meat and onion / garlic, spoon into hot coconut oil.

Meat can easily be substituted with corned beef, beef onions, whatever left overs that are handy. Corned beef tortas with cubed potatoes was my Mom's recipe that my wife makes.

I made some Creme Caramel for my wife's valentine's desert.

To the naked eye, it looked perfect... However, with my incredible cooking skills I managed to make it look perfect, while tasting like straight burnt sugar.

Haha, I seriously have no idea how the caramel burnt. It looked and smelled spot on.

I'll give it another go and pull the caramel off, lighter than normal.

Today is tantanmen, a Japanese take on a Chinese noodle soup. Switched the ground pork for beef shin, which tastes pretty good stir-fried too. Udon noodles instead of the rice ones, too thin for my taste.
And a delicious no-bake white chocolate cheesecake from Ottolenghi's cookbook.
