All day today I've been smoking a brisket on my Pellet Smoker. First time I've tried a brisket. I'm biased, but it was amazing! Super tender and moist. Pulled apart upon only the threat of a knife.
I also made a pan of veggies in olive oil and balsamic vinegar. Which even my peppers-adverse daughter loved! The only part she didn't eat was the onion, and she said even those were fine with the brisket.
Since the smoker was running all day, I also smoked some banana walnut bread. Good stuff.

Salmon Provençal with smashed cauliflower and roasted asparagus. A family favorite, even the 6yo kidlets love it!
