Anyone know?

The kitchen utility series are 1.3 mm thick. As far as folders go...I believe the Ladybug/Manbug series are 2 mm, but as for full size folders it would most likely be the Chaparral which also has 2 mm stock. The Dragonfly, Delica, Stretch, etc. are all 2.5 mm if I recall correctly.

The Bradley Air is 2.3 mm but the Chaparral beats it at 2 mm.

I consider "Full Size" to be any knife I can get all of my fingers onto the handle, which counts out the Ladybug/Manbug/Jester series, and other than them, the Chaparral is definitely your best bet. There are a few variants to choose from as well, and there are several more in the works from what I've read. The Centofante Memory might also be 2 mm stock...I'd have to look that up though, but I'm fairly certain that it is. The Chaparral is the more mainstream and available option either way though.

The Catcherman model with MBS-26 blade steel had a significantly thinner blade than it's AUS-8 predecessor. I do also agree that Spyderco's kitchen blades like the K-04 and K-05 models have relatively thin blades.

All the "Kitchen Sharps" are relatively thin, but the absolute thinnest is the C09 Parer, at 1.2 mm. As for folders, as others have mentioned, there are currently several with 2 mm blades and there have been a number of others in the past.

Centofante Memory is a thin one, also.

The Centofante 3 and 4 are awesome! Sprints please!!!!!!!!!!!!!!

The Centofante3 and 4 as well as the Chaparral have 2mm stock and the delica and dragonfly have 2.5 mm stock. The Police is 3mm which is thin for it's 4.25 inch length.

Cricket is pretty slim little thing, if memory serves.

FWIW, the Spyderco catalogs of their eras show the blade thickness of both the AUS-8 and MBS-26 versions of the Catcherman as 2mm. Given the nature of the one piece handle, I suspect the H-1 version would have to be the same. Which is not to say any of them, or the blades of any of the other models listed as having blades that are 2mm thick, are actually an exact 2mm thick.

Another vote for the Centofante 3/4. They're really superb knives that don't get the credit they deserve. I've always said they're way better than the Delica but I may be the minority there. I've been wishing for a ZDP Centofante 4 for years now.

Can't rule that out completely, but I'm fairly certain that, like other models with 1 piece FRN handles, the Catcherman's handle has a set of concentric ridges that serve as "washers" molded into it. Still, since the three steels were produced by different mills, at different times, and probably processed differently as well, I would almost expect there would be minor differences in finished thickness of the sheets. The number of measurements taken and averaged, where on the blade they were taken, and the accuracy of the calipers, it could also be factors.

FWIW, my curiosity was piqued, so I just measured my USN H-1 and older AUS-8A Catcherman. Ignoring a couple high outliers that I attribute to operator malfunction, I got readings varying between 1.92 and 1.97 on the spine behind the Spyderhole of the H-1 version, and readings between 2.03 and 2.06 on the AUS-8A blade. And, just for S&G, my S30V Chaparral measures between 2.05 and 2.11 in that location. My caliper is a fairly cheap one from Harbor Freight, so I won't guarantee its absolute accuracy. However, I've used it enough to be confident that, if it is off, it is consistently off by the same amount when I do my part.

I also own two of those USN Nuclear Green handled, H-1 Catchermans myself and I've not yet compared them against the other Catcherman models but now that I got it out of my footlocker it does seem to have close to the same geometry has the MBS-26 models have. I don't know if the black coating makes a significant difference in thickness.

Also I've owned quite a few of the culinary Spyders that they were selling in the early 2000s and I do remember some of them being thin at the time>> but I never measured them with a micrometer to see how thick or thin they were. I am certain with all of these new blade steels we have been deluged with recently that we will see a very thin Spyderco knife come forth at some time in the near future.

I'm carrying the Lava now and it seems pretty thin. But I think the Chap is the thinnest folder I have.

Besides the kitchen knives 2mm seems the thinnest in terms of blade stock. As for the least material behind the edge I would expect that would go to the Caly Jr, Chapparal or maybe one of the hollow-grinds like the Dodo or Cricket.
