What models are still in production?
Are, for example, the Stargate, Wegner, Chinook, Centofante, etc. still being produced. If so, why are they not listed in Spyderco's online catalogue? Thanks.

The Starmate, Wegner, and Centofante (except Centofante Vesuvius) are discontinued. When you choose shop online here, go to the discontinued section. If SFO still has some models left to sell they will be in the section. For the Chinook, it is a Custom Collaboration so go to that section to see it.
www.johnfjensen.com has a nice selection of discontinued Spydies at great prices

I got one of these also from SMKW for collection purposes, couldn't pass up the price. When it came there were two places where the scales appeared to be a little "light?" in color. What can I do to darken them up? I was going to just put a little oil and buff it out, but I thought I'd ask the experts first.

Pachucks,
I assume you are talking about the G-10 with "lighter shades" on the handles? If so, you could try to oil and buff the handle with a very fine grit sandpaper, say, 1500 or 2000 grit. What might work better, is to get a hold on a electric buffing wheel and some fine buffing compound and buff the handle to your peference sheen. Take care, though, as you might end up with a shiny handle instead of a "matte" finish if you go at it too long!

To answer your first question, SMKW is Smoky Mountain Knife Works. I believe the address is www.smokymountainknifeworks.com, but I am not 100% certain on that.
Keepin' it real...real sharp, that is.

I always get through to them at www.eknifeworks.com.
Along with a couple of really low Spydie's, they also have a Rusty Wallace Collectible Car Knife for only $2.25. Woohoo....
