CPM-S90V or ZDP-189 Mule for kitchen duty?

I've got the MT03 & MT04 mules and an empty slot in my knife block. Which one do you think would make a better kitchen utility knife?

My wife is pesco-vegetarian so I won't be cutting through any meat bones on a regular basis.

Try them both and let us know!
Off hand, I'd say the S90V would prove to be much more rust/stain resistant.
Either way, the poor veggies don't stand a chance. :o ;)

ZDP will stain like crazy(think nice patina), if that doesn't bother you, then either one will cut well.

this is interesting
as i have some zdp and have not ever seen it discolor

other then the how stainless one blade over the other is
S90v would be better used on protein and the ZDP on veg. matter its all about the carbides and how there made

BTW you will likly not see any difference till you sharpen to over 4000 grit

As Butch said, it is in the finer grits where you will see more differences. ZDP will get much sharper all the way to .05 micron, while S90V fights taking a polish. S90V will keep slicing for a really long time, especially if you leave a 1000 grit or so finish on it, while ZDP will be a great push cutter at fine grits. Basically, if you slice more I say go with S90V, if you do more push cutting then the ZDP would probably be the best choice.

from the little experience i have with both steels i say S90V. Stays sharper longer and doesn't seem to wanna rust
