That tarnish is probably Patina. It is a discoloration of the steel that a lot of us who favor carbon steel blades over stainless like. A little patina makes for a grey blade. You can always remove most of it by using a metal polish if you wish. Meats and some vegatables will do a nice patina on carbon steel.

Ive had to ban myself from peanut butter... I ... have a problem...

My last jar was strategically hidden by my girlfriend... she did a lousy job - hid it in my suitcase when I was going overseas in a few days...

That reminds me. I forgot I had Peanut Butter! I am going to have a PB and J sandwich for supper tonight! Thanks guys!

If it matters the steak was cooked medium rare :P
