Hi Morgenstern, where are u located, and what type of M.A. did you practice before? If you are looking for pure "practical knifefighting" i would look into "Sayoc Kali". You could also look into Jeet Kune Do. Most M.A. are not purely weapon oriënted unless you go to Fillipino Martial arts, or u go to the "civiliced versions" of the old Japanese swordfighting like iaido, or the sport version Kendo. Remember that most M.A. have been sportialised to be able to practice them safely and in a competition form. Due to the effectiveness of "combat oriënted" MA they don't tend to have a competition form.
Tell us somewhat more about yourself and if you have acces to large city in your vicinity.

I live in Montreal, pQ. Canada, and currently train in a modern version of wing chun kung fu and Muay thai. At the kung fu school we're taught kali for weapons, but have only done single and double stick so far. I practice with a blade using the same techniques, but feel that there's alot more or different techniques rather that can be done with a knife. I'm looking to find fast, realistic and reliable techniques.
They have a russianmartial arts school near by, but unfortunately, the school hrs do not meet my schedule. I'm thinking krav? Any suggestions?

See:
for Mike Janich schedules, videos, books, training.

Danny Inosanto sometimes gives seminars:
http://www.inosanto.com/

Mr. Inosanto is, I believe, 69 years old, so if you want to see him actively teach, sooner is better than later. I used to work out with some of his students in the 1970s, and went to one of his seminars last year. My impression was that the seminar gives an interesting, broad over-view of Filipino martial arts, while his regular classes are much more combat oriented.

Both Mr. Janich and Mr. Inosanto have a background in Wing Chun and Pacific island martial arts. For convenience, Mr. Janich's tapes parallel his seminars, which helps review. I believe Mr. Janich is the quickest way to pick up an immediately usable skill.

Your post suggests you are learning something very, very similar to JKD. Mr. Inosanto, for a variety of reasons, is reluctant to say he teaches JKD. Over the years, he has increasingly referred to what he teaches as Kali. You might benefit from a seminar with him, particularly if you want to ask questions of a kali master -- a title I am sure he would modestly disavow.

As an historical note, escrima was, in the 1970s, the unofficial weapons system of JKD, and I believe that is still the case. Since JKD has strong Wing Chun roots, some practitioners mastered Wing Chun dual butterfly knives (Baat Jaam Do, a cross between a knife and a really short sword, not the balisong), but it was not common.

You may find that knife work is not so different from stick, because the angles remain the same.

I Have Read A Number Of Books Related To Knife Craft. For A Concise Guide, Put Them Down And Take Them Out Knife Fighting Techniques From Folsom Prison, Is A Good Choice. It Was Published By Pallidin Press. I Can Not Remember The Author As I Have Long Since Parted With The Book. But It Is A Realistic If Not Scary Read, Based On Americas Fine Correctional Institutions. Written By An Inmate. Truly An Interesting Read.

Gunting

Maybe you'd like to visit cssdsc.com. It's about Bram Frank's knives and his knife fighting philosophy. Bram Frank is the one that designed the Gunting and developed a particular style of using it. I hope you'll find it interesting.
