Sal, Chef's Knife... Please?

Just started Chef's school, and I need a chef's knife in the 8-10 inch range. Full bolster, that kind of thing. I have about a year until I need one, and I have been a very satisfied customer for the last 12 years.



Any chance that something like this is in the works?

Hi Pat,
If you search real hard, you might be able to find these:

KX01 - Kitchen Experimental 1

SP-M300 (production version of KX01)

Summary:

SP-M300 - 17 1/4" OAL - 11 3/4" blade
SP-M240 - 14 1/2" OAL - 9 1/2" blade
SP-M120 - 8 7/8" OAL - 4 5/8" blade

KX01 = SP-M300 but with hidden tang
KX02 = SP-M120 but with hidden tang
KX03 = SP-M240 never seen a picture of it.

More pictures on my site. I noticed I mixed up the specs of the models so I need to fix that.

Good luck searching. I've only seen two of these on Ebay in the last two years or so...

Edit: forgot to add that these models were discontinued around 1997.

it's not a spydie, but check out george tichbourne's work...

makes a fairly heavy/solid knife.

I just picked-up a new 8" chef's knife from Shun (Kershaw). Very well done, and probably the sharpest knife I've ever used.
