What grit finish for a hunting/fishing knife?

Can't add any better info. Like most commonsense guys, I use what I have. If I have more time, I take things further. But I mostly focus on "sharp enough."

Personally, when I do not seek middle ground, I end up with one knife for cutting scales and bones, and another for flesh.

Practically, this one can do it all at any grit.
