At last year's Amsterdam Meet a new concept model of a folding kitchen knife by Ed Schempp was shown. He managed to take a relatively conventional cook's knife blade (about 6 inches long IIRC) and fold it into a handle that could 'expand' to protect the edge. Not something you could clip to your pocket, but definitely something you could put in your pack for camping etc... It looked very promising to me. In the meantime I'll make do with my XL Chinese Folder.

K2 Farid is pretty impressive, carved a Turkey with on this year. It worked great. I have been using a Military lately great at food prep. Another is the Stretch, great for apples. The new Pattada is on my to try list.
