I visited Vilnius several times 25-30 years ago. My wife used to have many family members over there. Beautiful old European City. There were many good places to eat. In one of them we were offered smoked pig's ears. We had a bite, but this was it. felt like cartridge. If you will have a chance, you should visit. A lot of history there. Beautiful duke's castle couple hours away in Trakai.

There are few kind of Borscht, also it varies what region of east/central of Europe it come from. One flavor - cold vegetarian, you can find in kosher section of most supermarkets. My wife loves to eat it during summers, when it is hot. She chops hard boiled egg and cucumber and adds to the content of the jar.

Deep Nutrition is an interesting read on why your grandparents or relatives in the old country ate fermented foods, bone broth, organs, ....

I do eat nose to tail, my grass fed beef is from a local rancher. Also local goat, duck, eggs...

I made a nice bone broth with grass fed cow parts yesterday, and removed Kim Chi from the crock this afternoon. My family and I really enjoy eating this way. The fermented garlic in the Kim Chi is really like medicine.
