Forget the fixed blade, I'll trade it for my custom 30-06 Mauser.I figure you could bust in to nearly any Walmart,or Any sporting goods store and find ammunition.
Folding knife would be a ChinookII.
If I need a fixed blade knife I'll duck tape me a bayonet to the barrel of my Mauser! :D

I would go with the
- Spyderco Pacific Salt Black Blade ~ C91BBK as my folder. (rust proof is a big deal when it comes to bodily fluids)
- Spyderco Hossom Forager ~ FB17P as my fixed blade. (With a utilitarian mindset. Limbs of wood or flesh will be chopped well with this knife.)
I am more of a Keep-It-Simple-Spydie guy myself.

+1 on the Rock Salt and Millie. But I keep hearing that the main use for your FB would be hand-to-hand combat. In my head, my main goal is going to be evade and survive as long as possible. If I feel the need or find myself in the position to take out the enemy, I am going to do it from as far away as possible. The knives are going to come in very handy for general camp tasks like food prep, dressing game, shelter building and fire starting.
I prefer to ask for forgiveness rather than permission.

The reason, In my opinion, to have a defensive/offensive blade is the same reason that the USA Liberator45 pistol(the only pistol in history which took longer to load than to make) was used for in the 2nd World War. I refer to the ambush assassination of an enemy for their gear and weaponry upgrade. I do not think making a bet that your knives will get more war time than utility time is a smart wager. But having the ability advantage is nice. :)

In keeping true to the letter of your request, I'd go with...
Folder: Spyderco Military CPM D2
Fixed Blade: Spyderco Temperance 2
I'd want the Military for its ease on maintenance and cleaning, light weight and slim carry, it's great balance, full flat grind for ease of cutting and sharpening, and its useful length. I'd want the good balance between carbon and stain resistance the CPM D2 offers.
Don't own a Temperance 2, but it seems to offer many good, practical features for a survival knife... sturdy construction, good edge retention, good stain resistance, good useful length, and full flat grind for ease of cutting and sharpening.
Since you said nothing about having time to grab a Spyderco Sharpmaker and extra Triangle stones to include the Diamond Triangle stones, I'd steer away from any :spyder: with a serrated or recurved edge because I might find the only sharpening device available to be a smooth, flat rock.
I'd be looking at the knives as fulfilling a utility role with self-defense as a last resort. Ideally, the Military would take on more of the "camping" chores while the Temperance 2 would be the choice for heavy duty chores, such as chopping wood.
