I think Brussel Sprouts are underrated. Kids tend to hate them - but they are absolutely delicious if prepared right. What did you cook your sprouts in, MadRookie? They look delicious! Nice feast!

Brussel Sprouts are awesome, you boil them and then bake them in real butter with a lot of pepper :) Just heaven!

I've never seen that Tabasco salt here, but maybe I haven't been looking in the right place. I'll see if I can find it.

Looks pretty awesome Rookie. I like the napkin in the fork and I think the 2nd picture exposure is better than the first.

What is the 35 days matured suggesting. A long marinade?
Is that both pork and beef in those photos?
I do like your indoor cooking fire shown in earlier posts.

35 days vacuum sealed in fridge after dry hanging for 14 days.

Yep, pork neck steaks.
