Has anyone used a Chef's Choice knife sharpener?
The model #120 comes highly recommended by a friend who is a professional chef.

I've heard that those are fast for putting on an okay edge, but can't put on a really razor sharp edge. It's hearsay, of course, but I just report the rumors.
If you want a really excellent sharpener for around the same price, I'd suggest the <img src="spyder.gif" width=15 height=15 align=middle border=0> 204MF. It can put an edge on anythign that has an edge. <img src="smile.gif" width=15 height=15 align=middle border=0>

One of the biggest advantages of the 120 is that the angle is consistent.

I had a guy demo one for me and it might be fine for large kitchen knives but it can't sharpen the last 1/8" - 3/16" of blade and if your blade (delica, navigator etc) isn't that long you what all the edge that it has. The 120 took off a lot of steel I had him sharpen my victorinox and you can see where the tool carves into it and this was 3 years ago and it is still there. I only had him sharpen it on the middle wheel and the strop I wonder how much steel the rough wheel would have taken off.
I will admit it does get the edge very sharp very fast.

I sharpened a PE Delica on the 120. I could get back all the way, but it did take a little off the corner of the kicker. Yeah, it does tend to take more metal off but not anywhere as much as your blade. I don't know what the guy was doing that sharpened your Victorinox. Did the 120 cause the scratches that are the width of your blade too?

I think the guy wasn't so good the scraches are from use but they look 100x worse in this scan than they do in real life. The blade is only a 1/16" at the widest part. It is really easy to keep the angle consitant, just keep your hand strait up and down, perpendicular to the suface that the 204 base is sitting on.
I own a Chefs Choice 120 electric sharpener.
I DO NOT USE IT ON COLLECTORS OR SPYDERCO KNIVES because it scratches the surface above the edge. Sharpens quickly and does a fine job and I use it on kitchen knives that are not damaged by a few superficial scratches.
examples of knives that I sharpen with the 120 are CASE kitchen knives (high carbon steel not highly polished surfaces), utility knives, some pocket knives and whittling tools.
The Spyderco 204 sharpner is my choice for a sharpening device that works on all my good knives without incurring any damage.

I will probably get a 120 to make short work of kitchen knives, etc.
