What is the source of the "shell" in a root beer shell inlaid Native? Is it a creature or something artificial?

I know the material is similar to Zytel.

It is a thin layer of real shell bonded to a base of G10. I don't know which animal it comes from.

G-10 Shell
An ultra-thin layer of mother of pearl (or other type of shell) which is laminated to G-10 and used as inlaid decorative handle scales on several Spyderco models including the C66 Versuvius.
