Only really have 4 (ok, 2 of them are multi-tools)

1. Spyderco Police (lol, at the moment!)
2. Laguiole de l'artisan (boxwood handle)
3. Swiss Army Huntsman/Explorer
4. Leatherman Charge
Top :spyder:s : Caly 3, Stretch, Millie, Manix 2, Police, Kopa, Polliwog, Meerkat, Chinook III, and SuperHawk.

REKAT - Carnivour - an inspired handle design and great blade shape
Oh, Man. That is one I let get away, years ago. I can still recall how that felt in the hand. It just snuggled up and hugged my pinkie.

Sigh...

Ah, then, my top (mixed) five:

Spyderco Persian (full size, thank you very much). Another hand-pleasing handle, and a powerful slicing machine.

Benchmade 806D2 - possibly the pinnacle of large folding knife design.

HAK Curvey - the one knife I almost always have on me, or very close at hand.

BRKT Pro Scalpel II - finely contoured 4-finger grip and SHARP little blade.

Mercworx Vorax - ...

Only five, huh?

Thanks for the question.
