The two D'Allara models: the droppoint blade; the sheepfoot serrated emergency. These can cover most events in town and in country, along with one CoPilot, a Ladybug serrated sheepfoot and Ladybug serrated and plainedged.

Phoenix II
So, while writing about how much I like the BBL earlier today, I had a vision of a dream knife.
The Phoenix II
handle - Contoured slabs of smooth black G-10. Same general shape as the current offering but all the contouring done on the single slab then polished nice and smooth. This thing could be STUNNINGLY Beautiful and wonderfully functional.
Deep carry wire clip
Blade - FFG, S30V is fine but S90V would rock.
I know this isn't gonna happen but MAN oh MAN.....

D'Allara Salts
I would have the D'Allara Droppoint and Rescue as Salts; they along with the Ladybug spearpoint (around neck with keys and Leatherman Squirt) and the Ladybug Rescue (in emergency kit) serrated are what I carry daily. I designed a shoulder bag with four pockets to carry the D'Allaras, a flashlight, and a leatherman Wave, and first aid and emergency kits (flint/steel, fishing gear etc) in small Otter boxes. Rustproof D'Allaras; Ladybugs too. All cops, EMSs, campers, hunters, and bicycle tourists should have them.
The D'Allaras are the best Spydercos made, no contest.

After thinking about it I'd like
1) CF Manix 2 in CPM 10V ( the most wear resistant production folder ever! Only alien technology from Area 51 could out do this carbon steel for wear resistance. Not good for chopping, but tough enough for hard use folders as long as no prying. This would cause owners who work their knives hard to look at knives differently.
2) G10 Millie in Carpenter Micro Melt PD#1 alloy ( Powder steel Vascowear) Upgrade to D2/S30V/3V class steels in everything except corrosion resistance. This is the stuff that won't chip, wears tough, takes an edge and is strong, strong stuff. Great hard/extra hard use folder steel! Yablonowitz needs one for the really tough jobs. Much stronger but not as wear resistant as S90V. More wear than all except super steels.
3) millie in stainless 20CV I like it a bit better than S30V. Slightly more wear resistance on paper. I've not tested head to head but I find the 20CV easier to sharpen than S30V.
Yeah, Sal would think I was crazy for even believing these are practical in production settings ( the CPM 10 V anyway, the others are not as difficult as S90V to make)
4) Caly 3 sprint in Super blue, FFG, .010 edge. Very, very nice
5) Street bowie in coated O-1. Enough said, but still the VG10 is nice. I just like o-1 and want to see it in more than the bushcraft. I'd love a folder in o-1.

Not a far out dream knife, but one that could be made from what's here now.

I told him a Ti frame lock military, with CF on one side, Tip up with an M4 blade. He said he liked my idea and would try.

I would change the Sharpmaker to have 12" long by 1" flat sided rods and the ability to store all four grits (Diamond, Medium, Fine, Ultra-Fine) rods on board. To carry the stones on board, I would build up a storage space under the unit that would double the totoal height off of the table and keep the molded bottom stone position where it is now.

My dream Spyderco is 3.5" closed size - I think this size is lacking a little bit in the current lineup. Something approximately the size of the Urban - a little bigger than D-fly, but smaller than Caly Jr.
I want flat grind, mid-lock, S30V / made in Golden, G-10 or FRN in non-black handle (blue, burgundy, or foliage green would be nice). Wire clip, finger-choil, lanyard hole. And a design that totally covers the tip of the blade when it is closed (like the D-fly, Rookie, etc).
Honestly, I think Spyderco already has several 'perfect' knives, but there are a lot of niches to fill. Mini-Persian, Cricket SS-SE, Tasman SE, Caly Jr, white FRN D-fly (but I don't use the clip), Kiwi, Para (with removal of some of the bump/ridge at rear or handle), and Stretch are awesome designs. Also the byrd Crow and Flight - cheaper materials, but I like the 'pattern' as much as any other knife out there.

Lum Chinese with a smooth FRN handle a la the Centofantes.
Spyderco version of the Emerson SARK. Basically a hawkbill with a rounded tip. Fully serrated, and no wave.

Not exactly Frankenstein's laboratory here :) But, I'd like a Dragonfly in matte cf and zdp189. I think it would be irresistible :) . And, a lockback version of the new droppoint UKPK, again in matte cf and lam. zdp. (I.e. a droppoint Caly 3 :) )
Otherwise, what I'd like to see is the use of a kind of crimson/scarlet G10 on a knife based around the Native4, only with a less broad and slightly longer blade - no hump, but some jimping. Also without the rhymed choiling
