I carried a PE aluminum Bob T Jr (C19P) for a while ... quite rare ... I recently gave it to a friend. At the moment I'm carrying a Moki Jess Horn, which is identical to the Spyderco C27P, apart from the stamping on the blade.
In my rotation is also a Spyderco Mouse, a blue ZDP Delica and a carbon fiber Delica. All worn, sharpened and scratched :) . If I were to get my hands on a carbon fiber walker, I would for sure carry it also.

I used to carry a Shabaria.

As to why I don't anymore ... don't get me started; has to do with legislation.

Large Persian - somewhat of a rarity these days.
Dyad Jr Micarta - also somewhat rare I hear.
Swick - with only 480 out there, that's pretty "grail-ish"

C83 Persian, (one of my coworker is crying every time when he sees me braking down boxes with it, but this is very comfortable knife)

Let me see...

Micarta C39 Dyad Jr. in my watch pocket
C44 Dyad in my RF pocket
C50P Centofante II next to my wallet
C54BMP and/or C54BMS Calypso clipped in my waistband
C07S Police in coated and uncoated aluminum get thrown in my jacket pockets pretty regularly of late.
Then there's the blue Yojimbo I use for a drywall knife when I'm not using my S90V Military instead.
The Toad and Mouse don't get carried much, but they've both been used in the past.
I don't believe in safe queens, only in pre-need replacements.

I've been carrying a Paramilitary because I just can't bring myself to regularly carry the Lil' Temp for fear of losing or damanging it.

Plain edge 440V Gunting (carried just about anytime I am not wearing a business suit--this one has been back to the Spyderco Restoration Spa once, due to the fact that I beat the crap out of it)

Black Yojimbo (when I feel like carrying it :D )

VG10 Spyderfly (one of the first produced and before the switch in steel--in my "go" or "tactical" vest) [I'm a LEO, so did not have to send in my 'flies when Spyderco asked that they be returned after the court settlement in regard to the ICE case]

Green Lum Chinese (carried and worked with to the point that I am not too pleased with the way that the liner lock is engaging now, due to wear and some of the martial arts related quick openings and other abuse I heaped on the knife--not the knife's design or fit and finish. It is honorably semi-retired now).

Not exactly "grails," but I have seen quite a few people looking for them now:

Kris (engraved with Albo Kali Silat logo on the bolsters) (carried a lot :D )

Foliage Green CPMD2 Military (carried a lot when I am in a business suit)

SPOT with Micarta scales, plain edge (carried quite a bit when I was in Agent or SWAT mode, but not much now that I am in Supervisor mode and also have determined that I don't, in general, like neck carry that much).

While not exactly a "holy grail" I do occasionally bring my 440V PE Millie with bead-blasted clip out of the box on rare occasions. I guess I kind of consider it a "grail" to me because it has a lot of sentimental value.

1. C83 Large Persian - almost all the time
2. Kopa Cocobolo - almost all the time in conjunction with the above :)
3. Kopa Black Micarta - in rotation with the Cocobolo above
4. Blue Delica 4 ZDP - some consider this to be a grail or a rare piece.

As I am currently rationalising my collection, I think a few more 'grails' will be added to my EDC 'bucket' (the drawer runeth over :D :P
