I really fell in love the the centofante design especially the centofante 4.
However, I am concerned about two things
1. Is the blade to thin for outdoor use, I am not hard on my knives but I would like the centofante to be strong enough.
2. I know there are many fans of the Wharncliffe design for its cutting ability, But will it work well for me when field dressing a deer ? or should I go with something with more belly like the Centofante 3?
Any help would be greatly appreciated/

You'll be much better served with the Centofante 3, as some belly (in the blade) is necessary for skinning. A Wharney just won't cut it here, as you'll likely be piercing the deer's skin (I would tend to think).
As for its durability--don't worry about it. If you have reason to worry about the Cento's durability, you have reason to consider a fixed blade.

I don't own a 4, but I can't say enough good about the 3. I carry this knife at work and for what I do, it does everything that the people with the bigger knives do - and just as well. This isn't to say that I don't have bigger knives, but this one's perfect, especially because I carry min in my shirt pocket. The big belly on this knife makes it a big cutter and slicer, for me. If there's one thing I'd change about mine, is the point above the Spyder Hole at the tip of the jimping. I'd like to see it more rounded. Maybe I'll get bold and give it a shot.

Definitely the 3 for your needs. I would say the blade might be a bit thin for outdoors things like hacking through branches, but if you keep it scary sharp, It will be like a scalpel for that deer, the thinness might actually help - but I am certainly no expert on field dressing. I would get another thicker blade if you are gonna be doing some hacking/ hard use.

The Centofante 3 rocks. One of my favorites. Great skinner too, though I prefer fixed blades for safety and ease of cleaning- E
