What sites/brands/makers do you recommend for a home cook looking to get a some economical enthusiast japanese cutlery knives? Probably keep it simple with a petty and a guyotu or santoku?

Before you dive into japanese cutlery I'd order a Kiwi #21 and / or #22. $15 or less shipped, and you can often find the two sold as a pair for $12-15.

Awesome, much appreciated! I have spent a good amount of time in Thailand and used lots of kiwi knives. That is what most street food and market cooks are using over there where kiwi is from of course. Amazing budget knives. Somehow I don’t have any in my kitchen here in the US at the moment. the octo was braised for 2 hours in a white wine broth then chilled. Served as an app, it was grill marked and paired with capers, olives & chorizo.
I don't even remember the maker of this sujihiki, I'd have to look through my emails at my chefknivestogo orders. I hadn't used it since around 2003 and decided to bring it in for breaking down salmon.

Probably my most carried knife since it dropped last summer.
I usually prefer RHK excellent Stone Wash finish because it wipes clean easily, but there is something undeniably fun about the Working Finish. Really hoping we see an Eklipse HS Wharnie.

Yep the Stone Wash on my Eklipse is so smooth & slick, very well done! Funny, I was looking at a XM-18 Wharncliffe just yesterday.

Carrying this today while debating how many to order during the sale that has them at $30. While I've come to prefer the Recon folder overall, these sure do zip through cardboard. They grind them a little thinner behind the edge than Recons, not to mention the SR1, 4 Max etc.

Enjoying a nice Guinness as I’ll be on call St Patrick’s Day so I can’t have a beer.

Eklipse HS Skinny Wharnie would be the only thing to get me to buy another Hinderer. I like the skinny Eklipse HS skinny so much, I cannot imagine getting another one because it cannot get any better for me.
