Rope, nylon, canvas, wood, plastics, food, grass, twine, rubber, cardboard.
All of these have fallen to my knives in the past, with the greatest pleasure value had in reducing pieces of 2x4s down to matchsticks.
Just go around looking for jobs that need done around the house. Eventually, something will just scream "Cut me!" Then cut it. ;~)

Oh Buddy!!!!!! You say you've run (now let me get this right) things to cut?? How can it be?
Suggest that you seek medical attention because your addiction is much worse than you thought!<img src="smile.gif" width=15 height=15 align=middle>)
Suggest this treatment plan...Lay down somewhere comfortable then let some one cover you with
knives, maybe the aroma of the steel will help heal you faster!!! What a hoot!!!!!!

Two fairly available resources come to mind.
Paper.
Newspaper: Cut in as many assorted ways as you can imagine.
TP/cigarette paper: Suspend 1 square with a piece of thin thread -- or a human hair -- no, you'rs are probably too short -- from a piece of Scotch tape -- rolled into a circle, so the thread/hair is only touching the outside of the tape. The hair/thread should be attached to the paper either in the same style mentioned, or simply by moisture. Object, cut the square cleanly -- no shredding/ripping -- and ensure the top piece remains suspended. (This is at least very like a cutting test developed by Jerry Fisk.)
Typing/printing/copy: Hold high with left hand. Drop. Draw your knife from carry position, Attempt to cut as much of a circle as is possible in the paper, before it hits the floor.
Others. I believe a search on Blade Forums, in the General, Custom Knives, Shop Talk, or Review forums could produce more cutting suggestions.
Rope: 1" or 1 1/8th" 3 strand hemp rope. Sharpen knife/knives to as similar level of sharpness/and angle as possible. Begin making either/both push cuts, and slicing cuts through a single strand of the rope, in approximately 1/32" lengths. Count the number of total cuts, or at point blade will no longer easily make further cuts. Record, compare, use different edge grinds, etc.
Air: Practice self defense routines.
