Old Spyderco Gyuto
I came across this neat old Spyderco for sale, it is a 240mm Gyuto. I didn't know they ever made anything like this, I'm curious if anyone knows more about these?

Hi Scandi Grind,
I had a small number of them made a while ago for professional chefs. A large knife, MBS-26 blade steel. Exceptional quality. Didn't do well in sales. Very expensive. It's kind funny, I've had chefs contacting me since, trying to find one. Hard to beat, about 12" long blade.

Thanks for the info Sal. It is a very nice looking knife. The handle appears to be very well sculpted.
So were these made in Seki like most of Spydercos other kitchen knives? Is MBS-26 stainless, semi-stainless, or non-stainless?

I think many Japanese-made Spyderco kitchen knives are made by Masahiro in Seki City. I think that G. Sakai and possibly Moki have also made some Spyderco kitchen knives.

I believe that MBS-26 is Masahiro's proprietary steel and used exclusively by them. On paper it looks rather unremarkable, however, with their specials heat treatment, it preforms superbly. This is why Spyderco continues to use it in their Kitchen Sharps line after 34+ years.
I have this knife without the welded bolster that Sal gifted to me in the mid90s. I use this "kitchen sword" every once in a while for fun and nostalgia.
