I have a favorite boning knife I use in the kitchen almost daily. For the past 20 years or so I've been using a Forshner/Victorinox model 407F for all my boning knife duties. Actually I have two of them because I found another one at a thrift store 3 years ago for .99 cents. The stainless Victorinox blade holds an edge pretty well for a knife in that quality range. But do keep in mind that I am constant and compulsive when it comes to keeping all of my working blades very sharp.

When it comes to specialized culinary knives I've been finding Victorinox and F. Dick both to be extremely satisfactory. Now I do find myself sharpening the Victorinox 407F quite often. But that is routine for me while using any type of "work knife". Overall I'm satisfied with it.
